Flying Fish at St Michael's Hotel & Spa
Under the leadership of Executive Head Chef Nick Hodges, the restaurant specialises in creating exciting cuisine using the very best that Cornwall has to offer. We work closely with local producers, farmers and fishermen to buy food which is as fresh as possible and of the highest quality.
For summer 2012, a new menu has been launched which as a special emphasis on fish and seafood. It has been designed to offer a relaxed dining experience where dishes can be mixed, matched and shared, meaning guests can savour a range of flavours and taste experiences. Being so fortunate in having some of the best fishing waters on the doorstep, we’ve placed a real emphasis on local produce – lobsters and oysters come from Falmouth Bay, mussels from Helford River and sea bass is line caught just off The Lizard.
Local suppliers are also favoured for 28 day aged sirloin steaks which are chargrilled exactly to order or a succulent pan fried chicken dish. Vegetarians aren’t forgotten as there is a surprisingly large range of meat-free dishes available.
Assuming you have left room, the dessert menu is a delight. St Michael’s own Pastry Chef Aaron Rawlings has designed the Flying Fish Chocolate Platter or for something different, try the Green Apply Mojito cocktail. If you’re looking for something a bit lighter but no less indulgent, we serve a range of Cornish ice cream or sorbets from Callestick Farm.
We believe the enjoyment of our cuisine is enhanced by the beautiful surroundings of our restaurant. During the hotel’s refurbishment, particular attention was given to ensuring the restaurant made the most of the unique view – over our own sub-tropical gardens to the beach, sea and coastline. During the day, guests can watch the activity in the bay as ships come in and out of Falmouth port. In the evening, the special Cornish light bounces off the sea and touches the cliffs around the bay; there really is no better place to watch the sun go down. On the best Cornish summer days, guests can enjoy a pre-dinner cocktail or dine al fresco on our roof terrace.
For the décor, relaxing pastel tones were chosen and are complemented by the modern Cornish art displayed on the walls. It makes for a stylish, family-friendly restaurant with a relaxed atmosphere and contemporary feel.
