Philleigh Way Cookery School
Their next generation farmhouse cookery style is inspired by recipes handed down over the generations, fantastic local produce and experience gained working in some of the top kitchens in Cornwall and around the globe. Their creativity, knowledge and enthusiasm make it the perfect place to reconnect with the land and sea, learn some old and new recipes and cook with some of the freshest seasonal ingredients Cornwall has to offer.
The courses are all hands on and practical and include Cornwall in a Day (think pasties and clotted cream), bread baking, fish cookery, pig in a day, game, cake baking, foraging, BBQing, cheese making and many more.
Throughout the spring and summer the cookery school also hosts regular outdoor feast nights called the ‘Woodfired Sessions’. Based on the Argentinian Asado style of cooking, the freshest locally sourced meat, fish and shellfish is cooked in front of diners in an outside kitchen over a huge wood fired Parrilla and in a purpose built wood oven. The menu is fixed but is always delicious and plentiful with the chefs giving the diners a summary of the menu at the start of the evening covering the provenance of the food and how it is cooked.
Monthly Supper Clubs held inside the Cookery School throughout the spring, autumn and winter months provide the opportunity for smaller groups to enjoy a delicious taster menu with elements of each course cooked in front of them by resident Philleigh Way chef George Pascoe.

Weber Winter Warmer Course
On Sunday 12th November, Philleigh Way will be heading outside once more to fire up the barbecues in preparation for their popular Weber winter warmer course. After all, a barbecue isn’t just for summer!
During the course, you'll learn how to get the most out of your BBQ during the winter months including cooking Sunday roasts, soups and even your Christmas turkey! The winter warmers course includes mastering Weber's renowned "lid-on" barbecue techniques for grilling, roasting, smoking and baking. During the course you'll prepare a variety of different dishes under the guidance of an expert chef using a combination of charcoal and gas barbecues as well as a range of top Weber accessories in a friendly and fun atmosphere.
You'll learn how to create great roasts on the barbecue and how to get your Yorkshire puddings right every time. Expert chefs will also demonstrate how to prepare and cook a turkey on the barbecue so you can treat your family to a rather special feast.
The four-hour course includes a 5-course meal and a booklet with all the recipes from the course to take home with you.
Dishes covered will include; Hot smoked salmon with potato rosti and herbed cream fraiche, Smoked leek and potato soup, Roast Turkey with Hasselback potatoes and Roast Beef & Yorkshire puddings served with Brussels sprouts and not forgetting dessert also prepared on the BBQ, Sticky toffee pudding with cream and berries.
The Winter Warmer course takes place on Sunday 12th November, runs from 10:00am-16:00pm and is priced at just £99.00 per person.
French and American Breads
Take your bread baking skills to the next level on Philleigh Way’s French and American bread course. During the course, France meets North America and you’ll learn how to bake classic breads including baguettes, brioche, croissants, bagels and cornbread.
To help any beginners, the basics of bread making are explained including an overview of the baking process, ingredients, learning the differences between flours and yeasts, proteins and gluten, measuring, mixing and kneading your dough. The course includes five demonstrations and four practical sessions. Everything is provided for you including Prosecco mid-morning and wine with a delicious Philleigh Way lunch!
The French and American bread course is taking place on Wednesday 22nd November.
We all know someone whose cookery skills are limited to burning toast or, opening a tin of beans! Why not treat them (or yourself if it’s you), to a fun day out at Philleigh Way Cookery School where not only will you master some simple, seasonal dishes that can easily be re-created at home but you’ll have great fun too!
In today’s world demands on our time are high and so the aim of the course is to equip you with the skills to recreate quick, healthy, delicious meals at home in a relatively short period of time. The emphasis is on making everything from scratch but you’ll also learn some labour saving tips and tricks to speed up the process.
Even if you are an experienced cook, this course is great for expanding your range of tried and tested recipes.
This is a hands-on course where you’ll be cooking, sampling and tasting a number of different delicious dishes. The final Simple Suppers course of this year is taking place on Saturday 18th November.
Christmas at Philleigh Way
This December, Philleigh Way has an exciting line-up of courses and events to get you in the festive spirit! Kicking things off is Philleigh Ways hugely popular Christmas cookery course which is taking place on Saturday 2nd December. Learn how to host the perfect Christmas party and wow family and friends with a variety of delicious festive delicacies. During this hands on course, you’ll learn how to make a classic festive German Stollen or Italian Panettone, a selection of delicious seasonal party canapés, tips and tricks to jazz up your roast Turkey or Goose, ideas for using up that leftover Turkey and a few warming wintery cocktails to amaze your party guests!
Returning for its second year is Philleigh Ways fun Christmas baking course. Nothing beats homemade when it comes to cakes and bakes and during this seasonally inspired baking course, you’ll learn how to prepare traditional favourites with a Philleigh Way twist! From a traditional Yule log to Philleigh Ways take on stollen, at the end of this fun, festive course, you’ll be heading home with a bag full to bursting with delicious treats to share with friends and family this Christmas (if they last that long!).
With baking enjoying a resurgence in popularity thanks for programmes such as The Great British Bake Off, this course gives students a sound grounding in a wide range of baking and decorating skills. No prior baking experience is necessary.
What better way to welcome friends and family to your home over Christmas than with a festive wreath adorning your front door. Learn how to create your own beautiful wreath with fantastic local florist Helen Johns and her team from Trebilcocks Flowers.
Join Philleigh Way on Wednesday 13th or Friday 15th December for a festive half day of Christmas wreath making, mulled wine and mince pies whilst learning all the skills required to design and prepare your very own Christmas wreath to take home and enjoy. Refreshments are included in the price together with all the equipment, materials and tuition. You’ll be amazed at what you can create with a little help and guidance.
Christmas Supper Clubs at Philleigh Way
This year Philleigh Way are hosting two ticketed indoor Supper Club evenings to get you in the festive spirit! Resident chef George will be preparing a scrumptious festive inspired taster menu and you’ll be treated to a complimentary glass of bubbly upon arrival. Why not get a group of friends together and start the Christmas celebrations early!
